  • 1.5 cup Buttermilk
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter
  • 1.5 cup Granulated sugar
  • 3 Eggs
  • 1 teaspoon Vanilla extract
  • 2 cup Mixed berries (strawberries, blueberries, raspberries)
  • 1 teaspoon Fresh ginger
  • 1 cup Water
  • 0.5 cup Honey
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the ginger syrup. In a small saucepan, combine the ginger, water, and honey. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and let cool.
  7. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  8. Once the cake has cooled, use a toothpick to poke holes all over the top. Pour the ginger syrup over the cake, allowing it to soak in.
  9. In a separate bowl, toss the mixed berries with a little bit of sugar. Arrange the berries on top of the cake.
  10. Serve the buttermilk cake with berries in ginger syrup and enjoy!
