  2. In a mixing bowl, combine blueberries, granulated sugar, cornstarch, lemon juice, and salt. Toss until the blueberries are well coated.
  3. In a separate bowl, mix all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Add ice water gradually and mix until the dough comes together.
  4. Divide the dough into two portions, one slightly larger than the other. Roll out the larger portion to fit the pie dish and transfer it.
  5. Pour the blueberry mixture into the pie crust. Roll out the remaining dough and cut into strips for lattice design or cover the pie completely.
  6. Brush the top crust with beaten egg and sprinkle with turbinado sugar.
