Preheat the oven to 350°F (175°C).

In a large bowl, combine the sweetened shredded coconut, cornstarch, salt, and granulated sugar.

In a saucepan, heat the whole milk and coconut milk over medium heat until hot, but not boiling.

In a separate bowl, whisk the egg yolks. Slowly pour the hot milk mixture into the egg yolks, whisking constantly.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.

Remove from heat and stir in the unsalted butter and vanilla extract until the butter is melted.

Pour the mixture into the pie crust and smooth the top.

Bake for 10 minutes, then reduce the oven temperature to 325°F (165°C) and bake for an additional 20 minutes, or until the pie is set.

Remove from the oven and let cool for 2 hours.

Once cooled, top with whipped cream and sprinkle with toasted coconut flakes.
