Preheat the oven to 425°F (220°C).

In a large mixing bowl, combine flour, baking powder, and salt.

Add cold butter, then use your fingers or a pastry cutter to cut it into the flour mixture until it resembles coarse crumbs.

Stir in grated cheddar cheese.

In a separate bowl, whisk together the egg and milk.

Add the egg mixture to the flour mixture and stir until just combined.

Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together.

Roll the dough out to about 3/4-inch thickness.

Use a round cookie cutter to cut out scones and place them on a baking sheet lined with parchment paper.
