Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just blended.
  5. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
  6. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  8. In a small saucepan, heat the heavy cream until it begins to steam. Remove from heat and add the chocolate. Let it sit for a minute, then whisk until smooth.
  9. Place one cake layer on a serving plate. Pour half of the chocolate ganache over the cake and spread it evenly. Place the second cake layer on top and pour the remaining ganache over it.
  10. Refrigerate the cake for at least 1 hour to allow the ganache to set.
  11. Before serving, dust the top of the cake with powdered sugar.
  12. Enjoy your delicious Boston Cream Pie!
