Preheat the oven to 180°C (350°F).

In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.

Add the spinach to the pan and cook until wilted. Remove from heat and let it cool.

In a bowl, beat the eggs and crumble the feta cheese. Add salt and black pepper, and mix well.

Grease a baking dish with olive oil. Layer 5 sheets of phyllo dough in the bottom of the dish, brushing each sheet with olive oil.

Spread the spinach mixture evenly over the phyllo dough.

Pour the egg and feta cheese mixture over the spinach.

Layer the remaining phyllo dough sheets on top, brushing each sheet with olive oil.

Bake in the preheated oven for 40-45 minutes, or until golden brown.

Remove from the oven and let it rest for 15 minutes before serving.
