  1. Preheat the oven to 180°C (350°F). Grate the carrots.
  2. In a mixing bowl, beat the eggs and sugar until creamy. Add the vegetable oil and mix well.
  3. In a separate bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the egg mixture, mixing well after each addition.
  4. Stir in the grated carrots and vanilla extract.
  5. Grease a round cake pan and pour the batter into it.
  6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Once cooled, sprinkle chocolate sprinkles on top.
