  1. In a large saucepan, combine the mixed dried fruits, butter, brown sugar, and water. Bring to a boil and simmer for 10 minutes.
  2. Remove from heat and let it cool for 10 minutes.
  3. Preheat the oven to 180°C (350°F) and grease a cake tin.
  4. In a separate bowl, beat the eggs and add them to the dried fruit mixture.
  5. Sift in the plain flour, baking powder, mixed spice, ground cinnamon, and lemon zest. Stir until well combined.
  6. Add the vanilla extract and brandy or rum. Mix well.
  7. Pour the mixture into the greased cake tin and smooth the top.
  8. Bake for 50-60 minutes or until a skewer inserted into the center comes out clean.
  9. Remove from the oven and let it cool in the tin for 10 minutes.
  10. Transfer to a wire rack and let it cool completely.
  11. Serve and enjoy!
