Ingredients
  • 1.5 cup Pie Crust
  • 1 cup Blueberries
  • 0.75 cup Sugar
  • 2 tablespoon Cornstarch
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1 large Egg
  • 1 tablespoon Water
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut into circles to fit the tartlet molds.
  3. Press the pie crust circles into the molds.
  4. In a bowl, mix the blueberries, sugar, cornstarch, lemon juice, and vanilla extract.
  5. Spoon the blueberry mixture into the tartlet molds.
  6. In a separate bowl, whisk together the egg and water.
  7. Brush the egg wash over the edges of the tartlets.
  8. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
  9. Allow the tartlets to cool for 30 minutes before serving.
