Preheat the oven to 375°F (190°C).

In a mixing bowl, combine blueberries, granulated sugar, cornstarch, and lemon juice. Stir until well coated.

In a separate bowl, mix together flour, powdered sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Add vanilla extract and mix until the dough comes together.

Divide the dough into 6 equal portions. Press each portion into a mini pie tin, covering the bottom and sides.

Fill each pie crust with the blueberry mixture.

Bake in the preheated oven for 25 minutes or until the crust is golden brown and the filling is bubbly.
