Blueberry Pie Bars
Blueberries are native to North America and have been enjoyed for centuries by Native Americans. They are often referred to as a ‘superfood’ due to their high antioxidant content.

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

In a separate small bowl, whisk together the egg and vanilla extract. Add the egg mixture to the flour mixture and mix until well combined.

Press half of the dough into the bottom of the prepared baking dish.

In another bowl, combine the blueberries, cornstarch, and lemon juice. Spread the blueberry mixture evenly over the dough in the baking dish.

Crumble the remaining dough over the blueberry layer.

Bake for 45 minutes, or until the top is golden brown.

Allow to cool completely in the baking dish before cutting into bars.

Dust with powdered sugar before serving.
