  • 200 gram Pie Crust
  • 2 cup Blueberries
  • 6 ounce Goat Cheese
  • 4 tablespoon Sugar
  • 2 tablespoon Cornstarch
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1 number Egg
  • 1 tablespoon Milk
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Roll out the pie crust and press it into a pie dish.
  3. In a mixing bowl, combine blueberries, goat cheese, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  4. Pour the blueberry mixture into the pie crust.
  5. In a small bowl, whisk together the egg and milk. Brush the mixture over the edges of the pie crust.
  6. Bake the pie in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Remove from the oven and let it rest for at least 2 hours before serving.
  8. Serve the blueberry goat cheese pie at room temperature or chilled.
