Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 0.5 cup Vegetable oil
  • 3 large Eggs
  • 2 teaspoon Vanilla extract
  • 2 cup Grated carrots
  • 2 tablespoon Blood orange zest
  • 0.5 cup Blood orange juice
  • 0.5 cup Chopped walnuts
  • 1 cup Cream cheese
  • 0.5 cup Unsalted butter
  • 2 cup Powdered sugar
  • 2 tablespoon Blood orange juice
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots, blood orange zest, blood orange juice, and chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. In a separate bowl, beat together the cream cheese, unsalted butter, powdered sugar, and blood orange juice until smooth and creamy.
  10. Once the cake has cooled, spread the cream cheese frosting over the top.
  11. Serve and enjoy!
