The Blackout Cake gets its name from the blackout drills during World War II, when the lights in New York City were turned off to conserve energy. The cake became popular during this time as a way to indulge in a sweet treat during the blackout.

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the butter, eggs, vanilla extract, and milk to the dry ingredients and mix until well combined.
  4. Gradually add the boiling water to the batter and mix until smooth.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes.
  8. Transfer the cakes to a wire rack to cool completely.
  9. In a small saucepan, heat the heavy cream until it begins to simmer.
  10. Remove the saucepan from the heat and add the chocolate. Let it sit for a minute, then stir until smooth.
  11. Let the ganache cool for about 10 minutes.
  12. In a mixing bowl, combine the powdered sugar, vanilla extract, and 2 tablespoons of the ganache. Mix until smooth.
  13. Place one cake layer on a serving plate and spread a layer of the chocolate ganache on top.
  14. Place the second cake layer on top and frost the entire cake with the remaining ganache.
  15. Decorate as desired and let the cake rest for at least 2 hours before serving.
