  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine blackberries, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat the blackberries.
  3. Roll out one pie crust and line a 9-inch pie dish with it. Pour the blackberry mixture into the pie crust.
  4. Dot the top of the filling with small pieces of butter.
  5. Roll out the second pie crust and place it over the filling. Seal the edges and crimp with a fork. Cut slits in the top crust to allow steam to escape.
  6. Brush the top crust with beaten egg.
  7. Bake for 45 minutes or until the crust is golden brown and the filling is bubbly.
  8. Remove from the oven and let it cool for at least 1 hour before serving.
