  1. Preheat the oven to 180°C.
  2. Roll out the pie crust and line a pie dish.
  3. In a large bowl, mix the blackberries, sugar, cornstarch, lemon juice, cinnamon, and vanilla extract.
  4. Pour the blackberry mixture into the pie crust.
  5. Roll out the remaining pie crust and cut into strips.
  6. Create a lattice pattern on top of the pie using the pie crust strips.
  7. Beat the egg with water to make an egg wash.
  8. Brush the egg wash over the lattice crust.
  9. Bake the pie for 45 minutes or until the crust is golden brown.
  10. Allow the pie to cool for at least 1 hour before serving.
