The Black Out Cake became popular in the 1950s due to its rich chocolate flavor and decadent appearance. It was named after the blackout drills during World War II when lights were turned off at night to prevent cities from being visible to enemy aircraft.

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add melted butter, milk, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in boiling water to the batter. The batter will be thin, but that's okay.
  5. Divide the batter equally between the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  8. In a saucepan, heat the heavy cream until it begins to steam. Remove from heat and add the chopped chocolate. Let it sit for a minute, then stir until smooth.
  9. Let the ganache cool for about 10 minutes, then beat it with an electric mixer until thickened and spreadable.
  10. Place one cake layer on a serving plate and spread a layer of ganache on top. Place the second cake layer on top and spread the remaining ganache over the top and sides of the cake.
  11. Refrigerate the cake for at least 1 hour to allow the ganache to set.
  12. Dust the top of the cake with powdered sugar and serve.
