In a food processor, combine black-eyed peas, breadcrumbs, onion, garlic, cilantro, cumin, salt, and black pepper. Pulse until well combined but still slightly chunky.

Transfer the mixture to a bowl and add the beaten egg. Mix well.

Shape the mixture into patties and place on a baking sheet.

Heat vegetable oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side until golden brown.

In a small bowl, mix sour cream, adobo sauce, and lime juice to make the adobo cream.
