Ingredients
  • 1.5 cup Black beans
  • 1 cup Flour
  • 3 tablespoon Cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Coconut oil
  • 0.75 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 2 cup Strawberries
  • 2 tablespoon Sugar
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 350°F (175°C). Rinse and drain the black beans. In a food processor, blend the black beans until smooth. In a mixing bowl, combine the black bean puree, flour, cocoa powder, baking powder, salt, coconut oil, maple syrup, and vanilla extract. Mix well. Pour the batter into a greased cake pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the strawberry compote by combining strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat until the strawberries break down and the mixture thickens. Remove the cake from the oven and let it cool for 10 minutes. Serve the black bean cake with the strawberry compote on top. Enjoy!
