Birds Nest Pie is a traditional British dish that dates back to the 16th century. It gets its name from the lattice pattern created on top of the pie, resembling a bird’s nest.

Preheat the oven to 180°C (350°F).

Roll out one sheet of puff pastry and line a pie dish with it.

In a frying pan, cook the bacon until crispy. Remove and set aside.

In the same pan, cook the chicken breast until browned. Remove and set aside.

In the same pan, sauté the onion and carrot until softened.

Add the peas and cook for another 2 minutes.

Sprinkle flour over the vegetables and stir well.

Gradually add the chicken stock and milk, stirring constantly.

Cook until the sauce thickens.

Add the cooked chicken and bacon to the sauce. Season with salt and black pepper.

Pour the filling into the prepared pie dish.

Roll out the second sheet of puff pastry and cover the pie, sealing the edges.

Beat the egg and brush it over the pastry.

Bake in the preheated oven for 40-45 minutes, or until the pastry is golden brown.

Allow the pie to rest for 10 minutes before serving.
