Preheat the oven to 180°C (350°F) and grease a cake pan.

Peel and grate the carrots.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

In a separate bowl, beat the eggs and then add the vegetable oil and grated carrots. Mix well.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Pour the batter into the greased cake pan and smooth the top.

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

In the meantime, prepare the cream cheese frosting by beating together the cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth and creamy.

Once the cake has cooled, spread the cream cheese frosting evenly over the top.
