  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the milk. Mix until just combined.
  5. Gently fold in the mixed berries.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. In a chilled mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  10. Slice the cooled cake in half horizontally. Spread a layer of whipped cream on the bottom half and place the top half back on.
  11. Frost the entire cake with the remaining whipped cream.
  12. Decorate with additional mixed berries, if desired.
  13. Refrigerate for at least 1 hour before serving.
