  1. Preheat the oven to 180°C (350°F) and grease a round cake pan.
  2. Peel and grate the beetroot.
  3. In a bowl, combine the flour, cocoa powder, baking powder, and salt.
  4. In a separate large bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  7. Fold in the grated beetroot.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Melt the dark chocolate in a heatproof bowl over simmering water.
  12. Once the cake has cooled, drizzle the melted chocolate over the top.
  13. Serve the Beetnik Cake with whipped cream and fresh berries.
