  1. Preheat the oven to 180°C (350°F).
  2. Heat oil in a large pan and brown the beef in batches. Remove and set aside.
  3. In the same pan, sauté the onion, carrot, celery, and garlic until softened.
  4. Add the flour and butter to the pan, stirring until well combined.
  5. Gradually pour in the beef stock and beer, stirring constantly.
  6. Add the Worcestershire sauce and thyme, then return the beef to the pan. Bring to a simmer and cook for 2 hours.
  7. Meanwhile, roll out the puff pastry sheets and cut into circles to fit the pie dishes.
  8. Divide the beef mixture among the pie dishes and top with the puff pastry circles.
  9. Brush the pastry with beaten egg and bake in the preheated oven for 20-25 minutes, or until golden and crispy.
  10. Allow the pies to rest for 10 minutes before serving.
