Battenburg Cake

Battenburg Cake was created in the late 19th century to celebrate the marriage of Princess Victoria, a granddaughter of Queen Victoria, to Prince Louis of Battenberg.

Preheat the oven to 180°C (350°F). Grease and line a square baking tin.

In a large bowl, cream together the butter and caster sugar until light and fluffy.

Beat in the eggs, one at a time, adding a little flour with each addition.

Fold in the ground almonds and almond extract.

Divide the mixture in half. Add red food coloring to one half and mix well.

Spoon the mixtures into separate halves of the prepared tin, creating a checkerboard pattern.

Bake for 25 minutes or until a skewer inserted into the center comes out clean.

Remove from the oven and let it cool in the tin for 10 minutes. Then transfer to a wire rack to cool completely.

Trim the edges of the cake to create straight sides.

Heat apricot jam in a small saucepan until melted. Brush the jam over the cake.

Roll out the marzipan on a surface dusted with icing sugar. Place the cake on top and wrap the marzipan around it.

Trim off any excess marzipan and serve.
