  1. In a food processor, combine flour, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.
  2. In a small bowl, whisk together egg yolk and ice water. Gradually add the egg mixture to the flour mixture, pulsing until the dough comes together.
  3. Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the oven to 375°F (190°C). Roll out the dough on a lightly floured surface to fit a tart pan.
  5. Press the dough into the pan and trim any excess. Prick the bottom of the crust with a fork.
  6. Bake for 15-20 minutes, or until golden brown. Allow to cool before filling.
