Ingredients
  • 2 cup Sweet potatoes
  • 4 tablespoon Butter
  • 1 cup Brown sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 1 cup Evaporated milk
  • 1 9-inch Pie crust
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Pierce the sweet potatoes with a fork and bake them for 45-60 minutes, or until tender.
  3. Let the sweet potatoes cool, then peel and mash them.
  4. In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, cinnamon, nutmeg, vanilla extract, eggs, and evaporated milk. Mix well.
  5. Pour the mixture into the pie crust.
  6. Bake for 45-50 minutes, or until the filling is set.
  7. Remove from the oven and let it cool for 30 minutes.
