Preheat the oven to 350°F (175°C).

Pierce the sweet potatoes with a fork and bake them for 45-60 minutes, or until tender.

Let the sweet potatoes cool, then peel and mash them.

In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, cinnamon, nutmeg, vanilla extract, eggs, and evaporated milk. Mix well.
