Preheat the oven to 350°F (180°C) and prepare a muffin/cake pan.

In a mixing bowl, mash the ripe bananas.

Add the spelt flour, cooked quinoa, almond milk, maple syrup, coconut oil, ground flaxseed, vanilla extract, baking powder, baking soda, cinnamon, and salt to the bowl. Mix well until all ingredients are combined.

Fold in the chopped walnuts.

Pour the batter into the prepared pan, filling each cavity about 3/4 full.

Bake in the preheated oven for 20-25 minutes until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes.

Transfer the muffins/cake to a wire rack to cool completely.
