Ingredients
  • 2 piece Ripe bananas
  • 1.5 cup Quick oats
  • 1 cup All-purpose flour
  • 1/2 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 1/2 cup Milk
  • 1/4 cup Vegetable oil
  • 1/2 cup Chopped nuts (optional)
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas with a fork.
  3. Add the quick oats, all-purpose flour, brown sugar, baking powder, baking soda, salt, cinnamon, vanilla extract, egg, milk, and vegetable oil to the bowl with the mashed bananas.
  4. Stir until well combined.
  5. If desired, fold in the chopped nuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes.
  9. Transfer the muffins to a wire rack to cool completely.
