Ingredients
  • 3 banana Ripe bananas
  • 1.5 cup All-purpose flour
  • 1 cup Shredded coconut
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/4 cup Milk
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. In a separate bowl, whisk together the all-purpose flour, shredded coconut, granulated sugar, baking powder, baking soda, and salt.
  4. In another bowl, cream the unsalted butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla extract.
  5. Gradually add the dry ingredients to the banana mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the loaf cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. Slice and serve.
