  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, mash the ripe bananas with a fork.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the mashed bananas and sour cream. Pour the batter into the prepared loaf pan.
