Ingredients
  • 500 gram Potatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Milk
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Cheddar cheese
  • 2 stalk Green onions
Instructions
  1. Peel and dice the potatoes.
  2. Chop the onion and mince the garlic.
  3. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  5. Use a potato masher or immersion blender to partially blend the soup, leaving some chunks of potato for texture.
  6. Stir in the milk, salt, and black pepper. Cook for an additional 5 minutes.
  7. Serve the soup hot, topped with shredded cheddar cheese and sliced green onions.
