Peel and dice the potatoes.

Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.

Use a potato masher or immersion blender to partially blend the soup, leaving some chunks of potato for texture.

Stir in the milk, salt, and black pepper. Cook for an additional 5 minutes.

Serve the soup hot, topped with shredded cheddar cheese and sliced green onions.
