Quinoa is not actually a grain but a seed. It is often referred to as a ‘superfood’ due to its high nutritional value.
This is vegetarian and gluten free recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.
Baked Quinoa Cakes with Broccoli & Sweet Potatoes

Preheat the oven to 375°F (190°C). Cook the quinoa according to package instructions.

Steam the broccoli until tender, then chop it into small pieces.

Peel and grate the sweet potatoes.

In a large bowl, combine the cooked quinoa, chopped broccoli, grated sweet potatoes, egg, breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper. Mix well.

Form the mixture into patties and place them on a baking sheet lined with parchment paper.

Brush the patties with olive oil and bake for 25-30 minutes, or until golden brown.

Allow the quinoa cakes to rest for 10 minutes before serving. Enjoy!
