Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the mashed sweet potato, eggs, milk, vegetable oil, and vanilla extract.

In a separate bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Spoon the batter into greased muffin cups, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
