Preheat the oven to 325°F (163°C).

In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth.

Add eggs, one at a time, beating well after each addition.

Gradually add flour and mix until just combined.

Stir in sour cream and lemon juice.

Pour the batter over the crust in the springform pan.

Bake for 45-50 minutes or until the center is set and the top is golden brown.

Remove from the oven and let it cool in the pan for 10 minutes.

Run a knife around the edges to loosen the cake from the pan.

Remove the sides of the springform pan and let the cake cool completely.

Refrigerate for at least 2 hours or overnight.
