Ingredients
  • 1.5 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (cold)
  • 4 tablespoon Ice water
  • 1 piece Eggplant (medium-sized)
  • 2 tablespoon Olive oil
  • 2 piece Garlic cloves (minced)
  • 3 piece Tomatoes (large, ripe)
  • 0.5 cup Fresh basil leaves (chopped)
  • 1 cup Mozzarella cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. In a food processor, combine the flour and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water and pulse until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Slice the eggplant into thin rounds and place them on a baking sheet. Drizzle with olive oil and sprinkle with minced garlic. Roast in the preheated oven for 15 minutes.
  3. Roll out the chilled dough on a lightly floured surface to fit a 9-inch (23 cm) pie dish. Transfer the dough to the dish and trim any excess. Prick the bottom of the dough with a fork.
  4. Arrange the roasted eggplant slices on the dough. Slice the tomatoes and arrange them on top of the eggplant. Sprinkle with chopped basil, mozzarella cheese, Parmesan cheese, salt, and black pepper.
  5. Fold the edges of the dough over the filling, pleating as necessary. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  6. Allow the crostata to cool for 10 minutes before serving. Serve warm or at room temperature.
