  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the apricots, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well and set aside.
  3. In a separate bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  4. Gradually add the ice water, tossing with a fork until the dough comes together.
  5. Divide the dough in half and roll out one half to fit a greased 9x13-inch baking dish.
  6. Pour the apricot filling over the dough.
  7. Roll out the remaining dough and place it over the filling. Trim and seal the edges.
  8. Brush the top crust with beaten egg and sprinkle with turbinado sugar.
  9. Bake for 35-40 minutes, or until the crust is golden brown.
  10. Allow to cool for at least 30 minutes before serving.
