  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  4. Stir in the dried apricots.
  5. In a separate bowl, whisk together the milk, vanilla extract, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 1 inch (5 cm) thick.
  7. Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges or rounds.
  8. Transfer the scones to the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
