Preheat the oven to 425°F (220°C). In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Cut the cold unsalted butter into small pieces and add them to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.

Stir in the dried apricots.

In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.

Use a round biscuit cutter to cut out scones from the dough. Place the scones onto a baking sheet lined with parchment paper.

Bake for 12-15 minutes or until the scones are golden brown.

In a small bowl, whisk together the powdered sugar and water to make a glaze. Drizzle the glaze over the warm scones.
