  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a pie dish.
  3. In a bowl, mix together the apricots, raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  4. Pour the fruit mixture into the pie crust.
  5. In a small bowl, beat the egg with milk to make an egg wash.
  6. Brush the egg wash over the edges of the pie crust.
  7. Bake the pie for 40-45 minutes, or until the crust is golden and the filling is bubbly.
  8. Remove the pie from the oven and let it cool for 30 minutes.
