  1. Preheat the oven to 190°C (375°F).
  2. In a large bowl, combine sliced apricots, sugar, flour, salt, and lemon juice. Toss until the apricots are evenly coated.
  3. Roll out the pie crust and place it in a pie dish. Trim any excess crust.
  4. Pour the apricot mixture into the pie crust.
  5. Dot the top of the apricot filling with small pieces of butter.
  6. Cover the pie with another layer of pie crust and seal the edges. Cut slits in the top crust to allow steam to escape.
  7. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Remove from the oven and let the pie cool for at least 1 hour before serving.
