Preheat the oven to 375°F (190°C). Grease a muffin tin.

Rinse the quinoa under cold water and cook according to package instructions. Let it cool.

In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

In another bowl, combine the cooked quinoa, dried apricots, orange zest, orange juice, maple syrup, vegetable oil, vanilla extract, and almond milk.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Divide the batter evenly among the muffin cups.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
