Applesauce Loaf Cake
Applesauce was first used as a sweetener in baking during World War II when sugar was rationed.

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually add the flour mixture to the butter mixture, alternating with the applesauce. Fold in the chopped walnuts.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
