  1. Preheat the oven to 375°F (190°C). In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. In a separate bowl, beat the eggs and sugar until well combined. Add the vegetable oil, milk, and vanilla extract, and mix well. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped apples and walnuts. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
