  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the flour, baking powder, salt, cinnamon, ginger, and nutmeg.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the creamed mixture, alternating with milk.
  5. Spread the batter into greased and floured round cake pans.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the pans and cool completely on wire racks.
  8. In a saucepan, cook the apples and water until tender. Mash the apples and allow them to cool.
  9. Place one cake layer on a serving plate. Spread a layer of mashed apples on top.
  10. Repeat the process with the remaining cake layers and apples, ending with a cake layer on top.
  11. Let the cake sit for 1 hour to allow the layers to meld together.
  12. Dust the top of the cake with powdered sugar.
  13. Serve slices of the cake with whipped cream.
