  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to create the crust.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, and continue beating until well combined.
  4. Pour half of the cream cheese mixture over the crust. Spoon half of the apple pie filling on top and swirl with a knife. Repeat with the remaining cream cheese mixture and apple pie filling.
  5. Bake for 55-60 minutes, or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Run a knife around the edges of the pan to loosen the cheesecake. Remove the sides of the springform pan and let the cheesecake cool completely.
  7. Drizzle caramel sauce over the top of the cheesecake and refrigerate for at least 2 hours, or until chilled.
  8. Serve chilled with whipped cream on top.
