In a large bowl, combine the flour, sugar, and salt. Cut in the butter until crumbly. Beat egg and cold water; gradually add to flour mixture, tossing with a fork until dough forms a ball. Wrap in plastic wrap and refrigerate for 1 hour.

Meanwhile, peel, core, and thinly slice apples. In a large bowl, toss apples with lemon juice. Combine the cinnamon, brown sugar, and pecans; add to apple mixture and toss to coat.

On a lightly floured surface, roll out dough into a 15x10-inch rectangle. Transfer to a greased baking sheet. Spoon apple mixture lengthwise down the center third of the rectangle. On each long side, cut 1-inch-wide strips about 3 inches into the center. Starting at one end, fold alternating strips at an angle across filling. Pinch ends to seal and tuck under.

In a small bowl, whisk egg white until foamy; brush over dough. Bake at 375°F for 35-40 minutes or until golden brown. Remove from the oven and cool on a wire rack.
