  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  3. In a small bowl, beat the egg and vanilla extract together. Add to the flour mixture and mix until well combined.
  4. Press half of the dough into the prepared baking dish to form the crust.
  5. In another bowl, combine the sliced apples, ground cinnamon, brown sugar, cornstarch, and lemon juice. Toss until the apples are coated.
  6. Spread the apple mixture evenly over the crust.
  7. Crumble the remaining dough over the apple layer.
  8. Bake for 40 minutes, or until the crust is golden brown.
  9. Allow to cool in the baking dish for 30 minutes before cutting into bars.
  10. Dust with powdered sugar before serving.
